Healthiest Chocolate Chip Cookie Recipe
Who doesn’t like a great chocolate chip cookie? In fact, who doesn’t like 30 of them (and all in one sitting)? And all too often the struggle is real when it comes to cookie moderation.
Luckily, there are some incredibly delicious and delectable recipes out there that offer more nutritional value than your typical grocery store cookie aisle.
Here is a recipe that is not only good for your health, but that is simple and gorgeous!

Perfect Thick and Chewy Paleo Chocolate Chip Cookies!
*Grain-free, Gluten-free, Dairy-free

-Ready in: 30 Mins
-Yield: 8 Large Bakery-Style Cookies!
• 1 Cup (100g) Organic Blanched Almond Flour
• ¼ Cup (32g) Organic Coconut Flour
• 1 Teaspoon Baking Soda
• ¼ Teaspoon Salt
• 6 Tablespoons (84g) Organic Coconut Oil or Organic Unsalted Butter (room temperature)
• ¾ Cup (150g) Organic Coconut Sugar (or Brown Sugar)
• 6 Tablespoons (98g) Organic Unsweetened Almond Butter (room temperature)
• 1 ½ Teaspoons Pure Vanilla Extract • 1 Large Organic Cage-Free Egg (room temperature)
• 1 ¼ Cups (213g) Enjoy Life Chocolate Chips, divided (or any other type of semi-sweet chocolate chips)
1. Preheat the oven to 350 degrees F (175 degrees Celsius) and line a baking sheet with a piece of parchment paper.
2. In a medium mixing bowl, stir together the almond flour, coconut flour, baking soda and salt. Set aside.
3. In a large mixing bowl with an electric hand-mixer or stand mixer, beat together the coconut oil (or butter) and sugar at medium speed until well combined (about 1 minute). If you use coconut oil, it may take a little longer to come together. In that case, use your hands to combine it and then beat another 20 seconds or so.
4. Beat in the almond butter and vanilla extract on medium speed and mix until combined. Beat in the egg on low and mix until well incorporated. Stir in the flour mixture until well combined. Then stir in 1 cup (170g) chocolate chips. If you used brown sugar, skip to the next step. If you used coconut oil, place the bowl in the refrigerator until the dough is firm.
5. Roll the dough into 8 (75g) balls and place the remaining ¼ cup (43g) of chocolate chips on the tops and sides of the dough balls (you can also roll them into smaller balls, but you may need to adjust the baking time). Place 3 inches apart on the prepared baking sheet and press cookies down lightly with the palm of your hand.
6. Bake for about 11-15 minutes (if using coconut sugar) or 14-17 minutes (if using brown sugar) or until the surface of the centre of the cookies no longer appears wet. They will be super soft, but will continue to cook as they sit on the cookie sheet.
7. Let cool completely on the baking sheet.
8. Store in an airtight container for up to 3 days!
– This recipe does not work with peanut butter
– For ‘Paleo’: Use coconut sugar, coconut oil and Paleo-friendly chocolate chips
– For dairy-free: Use coconut oil and dairy-free chocolate chips
– If dairy isn’t an issue, a Lindt Dark Chocolate bar broken up into pieces is a delicious substitute for chocolate chips.
Being healthy doesn’t have to mean you can’t enjoy yourself. In fact – it means you should find every way possible to enjoy yourself so it’s easier to hold yourself accountable for not falling off the band-wagon or falling into demotivation mode.
