Quick and easy finger foods for your Sunday barbeque – Part 1

Temperatures are rising, the evenings are getting longer. Gardens, terraces and parks are transformed into open-air kitchens – the barbecue season has begun!

In early spring already, when the first sunbeams show up in late autumn, when the days are already shorter, the smell of food being grilled in gardens, terraces and on campsites wafts through the air. Barbecue means fun, so here are easy and healthy finger foods for your Sunday barbeque!

Quick and easy finger foods recipe for Eggplant-bruschetta

Whether as a starter or for the BBQ buffet, Bruschetta is italian and means a special crispy roasted bread.  The bread not only provides the foundation for the crispy Eggplant, it also increases the fiber content of appetizers, makes long well-fed and brings the intestines moving. And Eggplant itself ensures vitamins. Eggplant is also one of many good substitutes for vegetarians to replace meat.

Ingredients for 6 servings:

• 2 eggplants (about 600 g)
• 2 tablespoons olive oil
• 2 sprigs of thyme
• Salt
• pepper
• ½ lemon
• 3 stalks basil
• 1 large clove garlic
• ½ crusty bread (250 g)
• coarse sea salt

Wash eggplants, dry them, cut in half lengthwise, carve the flesh with a knife several times and spread the halves on a baking sheet. Drop olive oil sparingly on eggplants. Rinse the Thymian and shake dry. Eggplants season with salt and pepper, thyme distribute it. Bake in preheated oven at 200 ° C (fan 180 ° C, Gas: Stuf 2-3) and cook about 40 minutes.

Remove the eggplants from the oven and let cool slightly, remove thyme. Now pulp  with a spoon from the shells.  Chop pulp finely and place in a bowl. Squeeze a lemon. Season the puree with about 2 tablespoons lemon juice, salt and pepper. Rinse basil, shake dry and pluck leaves, chop finely and mix with the eggplant-puree.

Garlic cut in half. Cut bread into 1 cm thick slices, vigorously rub with the garlic. Heat a grill pan (or normal pan), fry the slices of bread crispy brown in it from both sides. Distribute Eggplants-puree on the bread slices, garnish with a little sea salt and maybe some basil leaves and serve as eggplant- bruschetta immediately. Stuffed tomatoes Quinoa

Quinoa contains beneficial, satiating fiber, and pine nuts provide unsaturated fatty acids that are good for the health of the blood.

When grilling, no additional fat is needed, so it’s a wonderful low-calorie cooking method. There are also health benefits for losing weight by adding quinoa to your diet.

Ingredients for 6 servings:

• Salt
• 2 tablespoons olive oil
• 200 g Quinoa (preferably wholegrain)
• 50g pine nuts
• ½ bunch parsley
• 1 bunch scallions
• 30g sultanas
• 1 teaspoon paprika (rose sharply)
• 1 teaspoon cinnamon
• pepper
• 6 tomatoes (à 200 g)


Rinse quinoa short hot, then place in 250 ml of salt water and cook according to package directions. Pine nuts roasted in a dry frying pan. Wash the parsley, shake dry and chop leaves. Clean, wash and slice thinly scallions. Mix quinoa with pine nuts, parsley, green onions, raisins, paprika and cinnamon. Season it with salt and pepper.

Wash tomatoes. Cut off a lid and scrape out the seeds with a spoon. Season tomatoes with salt and pepper inside and fill it with the quinoa. Replace the cover. Tomatoes on a lightly oiled disposable aluminum grill pan grilling on medium hot grill for 10 minutes.
